We welcome any new recipes that you, our readers, would like to share. We have a professional dietician who will evaluate all submitted recipes and if found to be suitable your recipe will be included on the web site

The nutritional content of each of the recipes are included which can help you make the healthier choice when cooking, and the carbohydrate content is included for those of you counting carbohydrate as part of your diabetes management.

Remember the items in the baking and desserts sections are foods that may be high in carbohydrate or fat and therefore high in calories. If you are watching your weight these foods should be used in moderation!

Tagliatelle carbonara

225g tagliatelle
1 teaspoon olive oil
100g lean back bacon, chopped
6 tablespoons light creme fraiche
2 tablespoons fresh parmesan, grated
1 egg, beaten
2 tablespoons fresh parsley, chopped
salt and freshly ground black pepper

Instructions
1. Cook the pasta according to the pack instructions. Drain.
2. Meanwhile, heat the oil in non-stick frying pan, add the bacon and fry for 3-4 minutes, until beginning to crisp.
3. Mix together the crème fraiche, parmesan, egg and parsley. Stir through the pasta with the bacon.
4. Season and serve.
