We welcome any new recipes that you, our readers, would like to share. We have a professional dietician who will evaluate all submitted recipes and if found to be suitable your recipe will be included on the web site

The nutritional content of each of the recipes are included which can help you make the healthier choice when cooking, and the carbohydrate content is included for those of you counting carbohydrate as part of your diabetes management.

Remember the items in the baking and desserts sections are foods that may be high in carbohydrate or fat and therefore high in calories. If you are watching your weight these foods should be used in moderation!

Bacon chops with apple and cider sauce

4 bacon chops
1 tbsp oil, extra-virgin olive
1 tsp spread, low fat
2 apple, cooking, peeled and cored
2 cloves garlic, chopped
1 tsp artificial sweetener, granular
125 ml cider, dry
1 tsp vinegar, cider
1 tbsp mustard, wholegrain
A sprig of thyme
Salt and black pepper to taste

Heat a frying pan with the oil. Trim off excess fat and cook the chops for 10-15 minutes, browning well on both sides. Remove from the pan and keep warm. Add the spread and the chopped apples to the pan. Cook until just begining to turn brown. Add the garlic and sugar. Cook for another minute. Stir in the cider, vinegar, mustard and herbs to boil for a few minutes to reduce the liquid. Taste for seasoning. Serve chops with the sauce and mashed potatoe.
