We welcome any new recipes that you, our readers, would like to share. We have a professional dietician who will evaluate all submitted recipes and if found to be suitable your recipe will be included on the web site

The nutritional content of each of the recipes are included which can help you make the healthier choice when cooking, and the carbohydrate content is included for those of you counting carbohydrate as part of your diabetes management.

Remember the items in the baking and desserts sections are foods that may be high in carbohydrate or fat and therefore high in calories. If you are watching your weight these foods should be used in moderation!

Bacon and bean stew

450 g bacon - lean, salt reduced, diced pieces
1 tin of kidney beans
1 onion, finely chopped
2 leeks, chopped
2 carrots, peeled and sliced
6 potato, peeled and cut into chunks
2 cloves garlic, chopped
1 tbsp parsley, chopped
A sprig of thyme
Salt and black pepper to taste

Place the bacon in a large pot. Cover with cold water, bring to the boil, then pour off the water. Rinse the bacon and return to the pot. Cover again with cold water and add the onion, leeks, carrots, potatoes, garlic and thyme. Bring to the boil. reduce the heat and simmer gently for 40 minutes. Stir in the beans, black pepper and parsley and simmer for a further 10-15 minutes. Taste for seasoning. Serve in deep bowls with crusty bread.
