We welcome any new recipes that you, our readers, would like to share. We have a professional dietician who will evaluate all submitted recipes and if found to be suitable your recipe will be included on the web site

The nutritional content of each of the recipes are included which can help you make the healthier choice when cooking, and the carbohydrate content is included for those of you counting carbohydrate as part of your diabetes management.

Remember the items in the baking and desserts sections are foods that may be high in carbohydrate or fat and therefore high in calories. If you are watching your weight these foods should be used in moderation!

Apricot Porridge with Toasted Seeds

50g ready-to-eat dried apricots
150ml orange or apple juice
50g porridge oats
15g mixed seeds, toasted

Instructions
1. Place the apricots in a small pan and cover with the juice, bring to the boil and simmer for 5 minutes.
2. Set this aside for 10 minutes then place in a food processor or blender and blend until smooth.
3. Place the oats in a small pan, cover with 600ml (1 pint) water, place over a low heat and cook for 3–4 minutes.
4. Stir through the apricot puree, divide between 2 bowls and top with the toasted seeds.
5. Also delicious if served with blueberries or other fruits.

• 6g protein
• 34g carbohydrates
• 5g fat
