We welcome any new recipes that you, our readers, would like to share. We have a professional dietician who will evaluate all submitted recipes and if found to be suitable your recipe will be included on the web site

The nutritional content of each of the recipes are included which can help you make the healthier choice when cooking, and the carbohydrate content is included for those of you counting carbohydrate as part of your diabetes management.

Remember the items in the baking and desserts sections are foods that may be high in carbohydrate or fat and therefore high in calories. If you are watching your weight these foods should be used in moderation!

Lamb kebabs and grilled vegetables

Half leg of lamb, cut into cubes
Spicy Marinade
1 tbsp curry paste
1 tbsp oil, olive
Add Salt and black pepper to taste
Vegetables
3 peppers, deseeded and chopped
3 courgettes, sliced

Remove all visible fat from the meat. Mix the curry paste, oil and seasoning. Brush it over the lamb and vegetable pieces. Thread the lamb onto skewers, cook on a black ridged pan or grill for 5-6 minutes on each side. Add the vegetable pieces after 2-3 minutes. Preparation time: 10 minutes Cooking time: 10 minutes
